Process – One of the most popular cheeses, this surface ripened cheese needs the perfect ambience and temperature to get that soft pillowy coating and is aged for 3-5 weeks
Flavour Profile – A distinct aroma of the white chewy mould outside with a creamy paste inside, this cheese becomes gooier as it ages. Firmer in its initial stages, it takes on a mushroom-y yeasty aroma as it ripens.
Serving suggestions – With crackers or bread with a dash of honey. Can be baked with a sprig of rosemary and some chilli flakes, drizzled with honey for that gooey melty texture
