Process – Traditionally made by the process of cheddaring and then cloth bandaged while aging.
Flavour Profile – Buttery and nutty. Aged for 3 months and above. Younger cheeses are milder while more matured ones are sharper. Natural edible rind.
Serving suggestions – Serve with crunchy fruits like apples/ jams as a snack or with dry fruits, crackers and bread on cheeseboards/ platters. Great for baked recipes, pizzas, pastas and grilled sandwiches
Pairing – Crisp/ citrusy white wine with mild cheddar. Light to medium bodied red or whiskey with sharp cheddar. Also ciders.
