Process – Whole milk is added to skimmed milk, curds cooked till very small and aged for a minimum of 12 months.
Flavour Profile – Nutty, umami, flaky and crumbly, this cheese gets sharper as it ages. Melts well unless it is very matured
Serving suggestions – Great as a cooking or snacking cheese, it is truly versatile. Served best with sweet fruits and jams, shaved on salads and cooked recipes and with cold cuts
Pairing – dry white or red wine
